  • 1/2 cup zero-calorie sweetener
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp ginger
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 3/4 cup shredded apples (95g) - I used my food processor
  • 1 cup unsweetened applesauce (245g)
  • 3 eggs
  • 1/2 cup fat-free Greek yogurt (110g)
  • 2 tbsp melted coconut oil
  • 1/2 tsp maple extract

Instructions:

  1.  Preheat Your Oven: Start by preheating your oven to 350°F (175°C) and grease a standard-sized loaf pan. You can also line it with parchment paper for easier removal.

  2.  Mix Dry Ingredients: In a mixing bowl, combine the flour, vanilla whey casein blend, zero-calorie sweetener, cinnamon, baking powder, ginger, baking soda, nutmeg, and a pinch of salt. Stir these dry ingredients together until they are well combined.

  3. Prepare Apples: Use your food processor or a grater to shred the apples finely. Make sure to squeeze out any excess moisture from the shredded apples to prevent your bread from becoming too soggy.

  4. Combine Wet Ingredients: In another bowl, whisk together the shredded apples, unsweetened applesauce, eggs, fat-free Greek yogurt, melted coconut oil, and maple extract. Mix until everything is well incorporated.
